Food Pairing: Search for foods rich in umami like grilled flank or hanger steak, short ribs, bbq, pork and game meats, provincial herbs that complement the wines character like parsley, thyme, rosemary or chimichurri. Lentils, wild rice, shiitake or portobello mushrooms, warm spices, soy sauce and soft cheeses.
Fun Facts: This wine comes from the oldest vines in Australia, as well as the world, dating back to 1878. The primary Mataro (Mourvedre) grape vines in this bottle are resilient, stand strong against the Aussie heat and have been unaffected by the phylloxera bug. It’s a twist on the classic “GSM” blend and an ode to Bandol’s Mourvedre dominant red wines. Only 350 cases were produced. The thumbprint on the bottle represents Tim Smith’s signature approval for the wine to leave the cellar and into the market.
