Tasting Notes: On the palate, the wine leans towards a light to medium body structure from aging on the lees (a fermentation byproduct). Apparent aromas of grapefruit zest and crushed rocks on the nose, muddled herbs, meyer lemons, green apple, white pepper and lime dance on the tongue.

Fun Facts: The Chotard family has been making wine for well over 200 years in the hilltop town of Sancerre, surrounded by a commune of villages that collectively make up its eponymous appellation. Each village has varieties of distinct limestone that imbue a lengthy mineral component to their wines. Domaine Chotard farms the slopes of Crézancy-en-Sancerre, where flint-stone meets clay and the famous Kimmeridgian limestone is present. They harvest grapes later than their neighbors, resulting in full-bodied wines with a rich complexity. They ferment without commercial yeasts—only natural fermentation and age on the lees, a rare feat in an appellation where technical winemaking is still the norm.
