Tasting Notes: Perfumed by herbal qualities and ripe heirloom tomato, like walking through your grandmother’s flower/herb garden on a summer day. Marinated cherries, wet gravel, plum, strawberry compote, leather and sweet unlit tobacco. Rich and round, backed by vibrant structure, fine grained tannins and long finish.
Food Pairing: Beef & pork meatballs with spaghetti and marinara, peppercorn crusted filet mignon with mushroom risotto, grilled swordfish with eggplant caponata, roasted chicken with tomato marsala and pancetta, cacio e pepe, gnocchi with sage and browed butter.
Fun Facts: This wine ferments in wood and ages in oak barrels for 18 months, then it’s refined at least 6 more months in the bottle. Zero sulfites are added during production. Salcheto is powered by renewable energy, their waste water is 100% recycled and they even package in lightweight glass bottles!
