Tasting Notes: Aged 48 months in 40% new French oak barrels. Notes of herbs de provence, charcuterie, blueberry pie, ground pepper, Indian curry spice, crème brûlé, tiramisu and sweet bourbon. Silky on the palate with full flavors of black cherry, exotic vanilla bean, ending with a flash of leather.
Food Pairing: Braised lamb pappardelle pasta, Indian butter chicken, truffled mac n’ cheese, enchiladas, borscht soup, warm smoked whitefish dip with grilled bread, chicken croquettes with romesco sauce.
Fun Facts: Herman’s Story…Late Bloomer is the late draft pick that emerges as a scoreboard leader. It is comprised of a selection of lots that the winemaker babies for 4 years in a back corner of the winery. Aged without stirring or racking and topped every 2 weeks. The gangly kid on the label is a wine club member whose photo was selected by a panel of “experts” out of a hundred or so submissions from around the globe.
