Tasting Notes: Deep purple in the glass, with a complex nose that keeps you coming back for more. Ripe red and black fruits, dark roast coffee grounds, violets, earthy forest floor, bacon, nutmeg, olives, potpourri, pepper, silky raspberry jam coating the palate with intension and powdery tannins.
Food Pairing: Smoked meats, slow cooked foods, decadent cooking, game meats, mushrooms, lamb, bbq, duck, spice laden foods like Indian or Moroccan, blue cheese, sausages, stewed beans, root vegetables.
Fun Facts: Winemaker Christophe Baron was not only the first vigneron to successfully plant vineyards in the stones of the Walla Walla Valley and use biodynamic farming methods, but he was also the first to use horses for cultivation. His horse Zeppo arrived in 2008 and Red followed a year later. Today, the horses along with their teamsters, cultivate tightly spaced, 19th century-style vineyards that only they can navigate using specialized farming equipment created by a blacksmith in Burgundy, France. The stones laden valley was first discovered by Christophe in 1997 and at the time people thought it was a foolish gamble and that he would break his cultivating equipment, but he has been rewarded year after year with some of the most acclaimed wines in the nation.
