Tasting Notes: Complex aromas derived from the old vines and granite soils of white flowers, lemongrass, persimmon, honey, pear, lemon cream, flinty slate rocks, white peach and grapefruit.
Food Pairing: Oysters, crustaceans like lobster, crab and shrimp, scallops, smoked fish and fish pâté, fresh herbs, cream sauces, aged cheeses like gruyere or soft ripened goat cheese with a bloom rind.
Fun Facts: The wine comes from 50-100 year old vines in the cru of Clisson. The vineyards distinctive hard granite and quartz soils cause the deep-rooted grape vines to struggle, yielding a wine with great structure and complexity. After fermentation, the wine is aged on its natural yeasts “sur lie” and ritually stirred for 2 years in large underground vats. This technique called “bâtonnage” gives the wine a great aromatic complexity and lush richness.
