Tasting Notes:  There are depths of crushed raspberries, cooked strawberry, concentrated marinated cherry, dried roses, peppercorn and dried herbs.  A silky feel coats the palate offering ripe red and blue fruits accentuated by sweet spices, as juicy acidity maintains vibrancy.  Balanced minerals and inner violet florals come forward along with nuanced tannins that create a classically dry sensation on the elegant finish.

Food Pairing:  Grilled swordfish & eggplant caponata, braised octopus with n’duja potatoes, fennel sausage pizza, bbq chicken, honey nut squash & pear salad.

Fun Facts:  COS was founded in 1980 by Giambattista Cilia, Giusto Occhipinti and Cirino Strano. The acronym of their last names (COS) is where the name for the winery comes from. In 2005, the winery made their first wine that bore the Denominazione d’Origine Controllata e Garantita (D.O.C.G.) designation, the only one in Sicily.
