Food Pairing: Rich pasta dishes, grilled foods, mushrooms, chicken, vegetable based dishes, tuna or eggplant. This wine can balance between your favorite summer or winter foods.
Fun Facts: In 1971, Aldo Vajra, then a university student, was one of the earliest to adopt organic farming in Piemonte. Since those early beginnings, the vineyards continue to be nurtured and the soil is preserved by grassing and using spontaneous cover crops for almost 50 years now. The vineyard is sustainable and certified organic. With an incredible ratio of manual work per hectare, farming at Vajra is a labor of love and “recipe-free” practice. Intense research is also placed into monitoring and improving the biodiversity of both flora and fauna; not just in the vineyards, but also in the winery fields and forests.
