Tasting Notes: Big on the fruit and spice, but balanced for a bold dinner meal. Black cherry, blackberry, anise, mixed peppercorns, vanilla, oak, clove, coffee, blueberry, dark chocolate, plum like tannin. This wine is such a joy out of the bottle or even decanted for an hour.
Food Pairing: Steak! Smoked meats, stir-fry pepper beef, bbq, lamb dishes, roasted eggplant, slow cooked foods, confit dishes, mushrooms, duck and sweet potatoes.
Fun Facts: Tim Smith’s first vintage was in 2002. He produces small batch-focused wines and produced a mere 2,000 cases per year between his 6 different labels, sourcing from 100-140 year old vines in the central Barossa Valley.
