Tasting Notes:  Refreshing lemon, herbal thyme and bay leaf, fresh cut pear, sea shell and fennel pollen.  This wine starts out fresh and acidic but finishes with a creamy mouthfeel and slight minerality.  Aged mainly in stainless, with partial oak, this is an expressive chardonnay that’s great with food or by itself.

Food Pairing:  Salmon burgers with cucumber and wasabi mayo, grilled chicken caesar salads, quarto formaggi pizza, whitefish in beurre blanc, ricotta toast, fettuccine alfredo. 

Fun Facts:  The winemakers at Lioco believe if the fruit is well-grown and comes from a compelling site, there is no way to improve upon it. Their job is simply to usher it through the process of fermentation and into the bottle with as little intervention as possible. This has been their approach since Day 1 despite the incentives to conform to a more commercial style.
