Tasting Notes:  Brilliant ripe black fruits laden with spice, pencil shavings and stone.  It’s full and structured on the palate with mature tannins.  With notes of dark chocolate, clove, licorice, leafy green herbs, summer soil, plum, new leather, spice cake and boysenberry pie.  The wine is silky with a long finish that lasts on the palate.

Food Pairing:  Cast iron seared beef, wild game meat, beef stroganoff, sunday bbq, beef wellington, pepper crusted tuna on arugula flatbread, bacon wrapped dates with blue cheese, balsamic portobello mushroom, soy-pepper tofu with garlic and bell peppers.

Fun Facts:  Originally from France, winemaker Julien Fayard began his career producing quality rosé at his family’s winery in Provence.  After relocating to Napa Valley,   he was Philippe Melka’s director of winemaking for a few years before launching his own projects.  With more than two decades of winemaking expertise, Julien is one of Napa Valley’s most respected winemakers producing California varietals with French finesse.  In the consulting business he’s known as the “terroir whisperer.”  Voted winemaker of the year and a 100 pt score winemaker, Julien has a philosophy of “grape to bottle.”  This means no additives in the production of the wine. Straight from the vineyard to the bottle.
